At BOLLE, we meticulously select and understand premium vineyards to craft our wine. Our Chardonnay originates from the La Mancha region, one of the world’s largest wine-producing areas, located in the heart of Spain. Traditionally associated with native Spanish grapes like Airén and Tempranillo, La Mancha is now recognized for its international varieties like Chardonnay, which offers a unique expression distinct from those grown in cooler climates.

The land

The land here is rich in history, its soil a blend of minerals and moisture that nurtures each vine. The vineyards stretch across undulating landscapes, bathed in the Mediterranean breeze that breathes life into the fruit.

For over 120 years, the vineyards that provide BOLLE with its Chardonnay have been more than just fields of grapes—they are the lifeblood of a family, passed down through generations, each as devoted to the land as the last. This
family embodies a deep respect for tradition and a commitment to quality, making their name synonymous with excellence.

The unique process

Once the wine reaches our facility, it undergoes a meticulous de-alcoholization process using the most advanced de-alcoholization technology available, but even the best technology removes some character from the wine. That’s why Bolle, as the only provider in the world to do so, introduces a second fermentation.

We add fresh grape juice and yeast, initiating a second fermentation that elevates the wine to new heights. This innovative approach captures the purest expression of the grape and the terroir, delivering a wine that is bright, crisp, and elegantly balanced, with notes of crisp apple, juicy pear, zesty citrus, and a hint of toasted notes.
